I’ve seen Blue Ribbon Squares in the shops, but I’ve never been tempted to buy them… it’s only bread right? WRONG! We received a fabulous Blue Ribbon press drop last week and, believe me when I say, you’re missing out if you haven’t tried them. These squares are freakin’ delicious.

Blue Ribbon sent over a couple of yummy recipes to try and I just had to share. Oh, and I’ve heard that they make fabulous braaibroodjies too.

Apple Pie Stack

Yummy Blue Ribbon Squares Recipes 

Ingredients

2 white Blue Ribbon Squares
1 apple
125ml sugar
60g butter
60ml cream
2 eggs
Cinnamon
30-60ml milk
Plain yoghurt

Method

  1. Peel and core the apple, then cut it into eighths
  2. Get a frying pan onto medium to high heat to make your caramel sauce
  3. Pour sugar into the pan and stir until it starts to dissolve and caramelise
  4. Whisk in the butter, then add the cream when it’s fully incorporated
  5. Keep whisking until your sauce is thickened and smooth
  6. Add the apple eighths and let them simmer in the sauce for about 5 to 10 minutes on low heat
  7. In a bowl, whisk the eggs together with a healthy pinch of cinnamon and 30 to 60ml of the milk, depending on your preference
  8. Put another pan on medium heat and throw in a knob of butter
  9. Soak each BB Square slice in the egg mix for 30 to 45 seconds, then add to the pan and cook until golden brown
  10. Cut the fried Square slices in half diagonally
  11. Layer the French toast slices, caramel sauce, apples and yoghurt
  12. Sprinkle with a little cinnamon for that final touch

Ingredients

2 white Blue Ribbon Squares
200g cooked mince
4 eggs
Salt
Black pepper
4 tsp chopped parsley

Method

  1. Start off by preheating your oven to 180°C
  2. Grease a baking tray and place the four separated BB Square slices on top, crust side down
  3. Spoon your leftover cooked mince onto the slices, arranging it to leave a hole in the middle of each
  4. Break an egg into the centre of each mince ring
  5. Pop the baking tray into your oven and bake for 10 to 15 minutes, or until the eggs are cooked to your liking
  6. Remove from the oven and sprinkle with chopped parsley before serving

Creamy Avocado on Toast

Ingredients

1 brown Blue Ribbon Square
4 tbsp cream cheese
1 ripe avocado
Lemon juice to taste
1 sliced tomato
Pinch of salt
Black pepper to taste

Method

  1. Open one brown Blue Ribbon Square and toast each slice until golden brown
  2. Peel and chop avocado into a bowl, then add lemon juice, salt, and black pepper before smashing it all together using a fork
  3. Season the cream cheese to your liking with salt and pepper
  4. Spread each toasted Square slice with seasoned cream cheese
  5. Top with your freshly made guacamole
  6. Add the sliced tomato as the finishing touch
