Vegan Banana Bread Recipe

Hands up if you love banana bread! I do. I’ve never attempted to bake it myself, but with all the time on my hands during lockdown, I thought I’d give it a shot. And this vegan banana bread recipe is perfect.

We’re not vegan, but I’m always on the hunt for recipes that don’t include eggs and dairy – like our favourite chocolate cake. I hate baking yummy treats when Cara can’t enjoy them with us. If you have someone in your family with a dairy and/or egg allergy, give this recipe a try. Oh, and most importantly… it’s super easy and quick to bake.

I found this recipe last week on Veg Recipes of India and it turned out to be an absolute winner. It was very sweet (not complaining!), so next time I’ll try it with a little less sugar.

Vegan Banana Bread

Ingredients:

  • 4 medium sized over ripe bananas
  •  cups of flour
  • ½ cup of coconut oil
  • ½ cup of sugar (or less if your bananas are super sweet)
  • ½ teaspoon vanilla essence 
  • ¼ teaspoon cinnamon
  •  teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • pinch of salt

The original recipe offers alternatives to the above.

Step 1: Finely mash the bananas and mix with the sugar.

Step 2: Add the oil and mix well.

Step 3: Stir in the cinnamon and vanilla essence.

Step 4: Add the dry ingredients.

Step 5: Fold in the dry ingredients until mixed evenly.

Step 6: Pour the batter into a greased bread tin and bake at 180ºC for 30-40 minutes or until a toothpick inserted in the bread comes out clean.

Step 7: ENJOY!!!

The ladies of Make It Magical recently introduced us to a world of whimsy and fairy fun. We built fairy houses and it truly was one of the most memorable and magical days we have ever had.

Somewhere ‘twixt the dusk and dawn,
entwined in checkerboard slumber,
the faeries chance to grant your dreams
gathered in joyful number.
Pixie dust strewn through the air
spreads lighthearted pleasure.

When we were asked if we wanted to spend the day building fairy houses with Make It Magical, we were excited, but what we experienced exceeded all our expectations.

The Make It Magical team had the kids (and grown-ups) enchanted from they moment the arrived at our home. The girls struggled to give the ladies time and space to set up… they were just too excited! Then it was time.

We first had to choose a basic cottage…

Then the magic started. The girls immediately dug in. I, on the other hand, struggled a bit. Yes, I built one too! I was so overwhelmed by all the beautiful little treasures that I didn’t know where to begin. But when I started, I didn’t want to stop.

There were shakers filled with beautiful green grass, bark, moss, pebbles, stones, glitter, stickers, figurines, fake snow; the list is endless.

The lovely team guided us through the whole process. They gave us advice and ideas without stifling our own creativity. They actually brought out creativity and imagination that I didn’t know I had.

And they were so great with the kids. The girls didn’t want them to leave.

We had such a wonderful time with Make It Magical, that we are booking them for a birthday party next year. Yes, they do parties! They girls are also getting Fairy House Kits for Christmas. Better order yours soon if you want to do the same.
